A spot for small-batch handmade pasta noodles has opened in Hamilton

Sure, the prepacked Primo pasta at the grocery store is easy and convenient; but there’s something about fresh, homemade pasta that just hits different.

Necessary Noodles, a new food purveyor in Hamilton, certainly knows it; and that’s why they’ve opened up shop to make fresh, handmade pasta noodles in numerous varieties for your noshing pleasure.

Available for delivery and contactless curb-side pickup, Necessary Noodles’ handmade pasta is already earning a strong reputation with local foodies, with small batches of regular and stuffed pasta varieties frequently selling out.

It’s not hard to see why, either. The images on Necessary Noodles’ Instagram alone are enough to get the mouth watering, with a rotating selection of pastas including a chili pork and rosemary tortellini stuffed with 12-hour braised pork shoulder; a butternut squash ravioli with apple, brown butter, and sage; and more straightforward options including fresh pappardelle and tagliatelle.

A weekly menu is announced via social media, for which locals can then email Necessary Noodles to place an order, pay via e-transfer, and arrange pickup or delivery for those delicious noodles.

Best of all? The whole operation has charity on its mind, with 100 per cent of the pasta profits donated to feeding families in need; a cause rendered even more important by the impacts of the pandemic.
