Matty’s Hot Chicken is opening a pop-up this week in Hamilton

Ready to spice up your life? Hamilton’s newest spot for fried chicken deliciousness is about to bring the heat and serve up first tastes to local foodies.

Matty’s Hot Chicken, a new project headed by Chef Michael Cipollo of Hamilton’s famous HAMBRGR alongside his son Matty, has announced that they will be opening a pop-up this week to give locals a sneak peek of what’s to come from the fried chicken spot’s eventual brick & mortar location.

Two locations of Matty’s Hot Chicken are planned: one here in Hamilton, and the other in St. Catharines. The St. Catharines location launched its pop-up in advance of Hamilton’s, and the response has already been immense, with Matty’s already selling out of its Nashville hot deliciousness on the regular.

So, what can locals expect from the menu? On top of some dirty ‘n delicious comfort snacks like flamin’ hot mac & cheese and Nashville hot tater tots, the main attraction at Matty’s is the lineup of buttermilk fried chicken sandwiches with an elevated, chef-driven kick.

Served up on locally-made brioche buns and made with 24-hour marinated boneless chicken, the sandwiches include a basic option with house mayo, house pickless, and iceberg lettuce; a Nashville Hot offering with bread & butter pickles, Tennessee slaw, and Matty’s sauce; and a Hot Honey fried chicken sandwich with sweet & spicy jalapenos, slaw, and sauce.

Drooling yet? You won’t have to wait too long to squash that craving: Matty’s Hot Chicken’s pop-up will officially be launching this Tuesday, February 2nd at 4 pm within the forthcoming UnDefined Restaurant on King William Street. Best of all, they’re already taking pre-orders!

To order in advance, locals can check out the menu on Matty’s website, and shoot them an email at [email protected] to get an order in. Alternatively, orders can be placed through Uber Eats on the day of the launch for delivery.
