New cocktail bar Roswell is opening its doors in Hamilton

At long last, a mysterious new cocktail bar in Hamilton is set to open its doors.

That bar is called Roswell, an alien and UFO themed cocktail bar located in Barton Village that will be serving up out-of-this-world cocktails, bar bites, and beyond.

Roswell was formerly and briefly open as Stardust, an intimate bar created as a nightlife sister spot to Barton Street’s immensely popular brunch restaurant Motel.

However, Stardust was forced to close up shop indefinitely with the continued impacts of the pandemic, and the bar later went through a rebrand and transformed itself into Roswell, which carries an eerie extraterrestrial theme.

Roswell’s menu of “earth food and libations” features a handful of bountiful bowls made with flavoured rice, house-cured vegetables, and homemade sauces and aiolis. They’ve also got some creatively-topped hot dogs and nachos on offer alongside a handful of bar snacks like fries, salads, and more.

Then there are the cocktails, and Roswell’s menu of ten speciality cocktails has something for every palate, whether it’s the amazingly-named Gay Frog Water, made with vodka, fresh lemonade, soda, and basil; or the bright and fruit-forward Illuminaughty with tequila, peach schnapps, clementine, and lime.

Open starting tonight for both sit-in and takeaway, Roswell is sure to become a hot spot within the bustling Barton Village!
