Dundas restaurant Betula has been sold to new ownership

A Dundas restaurant known for its chef-driven, seasonally-inspired menu has been sold to new ownership.

Betula, located at 225 King Street West in Downtown Dundas, has become a local favourite for excellent dishes served in a casual-yet-inviting setting, from pork schnitzel to handcrafted burgers to pastas to share plates.

Owner and Chef Michael Stauffer took to social media yesterday to announce that the restaurant he has stewarded for the past half-decade will be passed along to new ownership.

Going forward, Betula will be headed by Wai Lee Lau, a chef with close ties to Stauffer who has worked previous stints at spots like the Ancaster Mill, The Bison in Banff, and George Restaurant in Toronto.

What changes will be made under this new ownership remain to be seen; but Stauffer seems beyond confident that he’s leaving his restaurant in exceptionally capable hands.

“I was so happy when she stepped up to buy the restaurant before I put it on the market. Firstly, because it is a great opportunity for her,” wrote Stauffer on social media.

“Secondly, I feel a tremendous amount of pride that I was able to turn this restaurant over to a passionate, creative and driven chef that I know will do right by the community that has done so right to the restaurant over the years.”
