Paper Crane Sushi is closing its doors

It’s a heartbreaking day for local sushi lovers, as one of Hamilton’s only spots for elevated Japanese bites has just announced that their doors will be shutting permanently at the end of the month.

Paper Crane Sushi, an intimate downtown restaurant known for serving up Chef Simon Wong’s elevated dishes that offer a step above the typical all-you-can eat sushi spot, posted to their social media that their last day in their John South space will be this Sunday, March 1st.

“We opened Paper Crane as a passion project because we couldn’t bear a world without Simon’s sushi in it. But, we found the model just wasn’t sustainable for us,” explained Paper Crane Sushi in their announcement.

The announcement was naturally met with some hefty heartbreak from Hamilton foodies, who cite Paper Crane as having some of the best sushi and atmosphere in the whole city. In fact, Urbanicity even included Paper Crane on our recent list of the top 10 date night spots in Hamilton for 2020.

Paper Crane Sushi was one of multiple Hamilton restaurant projects conceptualized by local hospitality group The Other Bird, the folks behind other popular mainstays like The Mule, Odds Bar, and the forthcoming James North hybrid reimagining of Rapscallion Restaurant and Two Black Sheep.

When speaking with The Other Bird if we’ll be seeing sushi added to any of the other restaurant concepts, the answer was no, “because we can’t do the sushi we want to without making it exorbitantly priced.”

So, time is of the essence to go grab those last sushi rolls at Paper Crane Sushi between now and their permanent closure on Sunday, March 1st.
