The wait is over: one of Hamilton’s hotly-anticipated new restaurants has set an official opening date.
UnDefined – the latest project by Chef Michael Cipollo of HAMBRGR and Matty’s Hot Chicken fame – will be opening its doors officially as part of King William Street’s restaurant row on Monday, June 14th.

Though details on menu offerings are still pretty slim, UnDefined intriguingly promises a culinary experience designed to playfully appease foodies of all kinds.
“We’re not afraid to take the familiar and turn it into something wild,” reads UnDefined’s website.
“If it tastes good we’ll put it on a plate or in a glass or whatever. Our mantra is as simple as eat, drink, and enjoy!”
The opening date also means that Matty’s Hot Chicken – which has been operating for takeaway out of UnDefined’s space for months – will be moving on out for the near future in anticipation of its own forthcoming restaurant location on Locke Street.
Taking up the space that most recently held Frat’s Cucina on restaurant row, UnDefined’s sleek and chic aesthetic looks like it’ll be a prime hangout spot once indoor dining is once again safe.
